Vegetarian Banh Mi Sandwich

Have you been charged with bringing something to your family picnic? This easy and VERY FLAVOURFUL recipe will make you look like a rock-star… It packs well for picnics, visits to the beach or simply to enjoy at work or home. Behold the Vegetarian Banh Mi Sandwich!

Vegetarian Banh Mi Sandwich

Ingredients:

1 Freshly Baked Baguette

Julienned Carrots and cucumber

Thinly Sliced Jalapeños if desired

Bunch Cilantro, washed and dried

Bunch Fresh Mint, washed and dried

Crushed Peanuts 

Hoisin Sauce

Sriracha Sauce

Mayo ( I used Kewpie)

1 package Firm Tofu, sliced

 

Tofu Marinade:

One Lime (zest and juice)

1 tsp Chinese Five Spice Powder

3 tbsp Soy Sauce

A few glugs of Fish Sauce (optional)

2 tbsp Toasted Sesame Oil plus more for frying tofu

3 tbsp Rice Vinegar

1 tbsp liquid honey or Agave Syrup

Directions:

  • Mix all ingredients for marinade in shallow baking dish or  container with lid. Lay tofu slices on top of marinade. Let sit for 15 minutes and then flip. Let sit while you’re prepping the rest of this recipe. 
  • Use julienne peeler or mandolin to grate carrots and cucumbers
  • Once tofu is marinated, heat a bit of neutral or sesame oil in cast iron or non-stick frypan. Lay slices of tofu in single layer in pan and cook until lightly browned, then flip and cook the other side until lightly browned.

    ASSEMBLY

  • Slice Baguette lengthwise and spread both sides with generous amounts of mayonnaise, hoisin and sriracha sauce
  • Sprinkle crushed peanuts on the bottom layer of the baguette
  •  Lay slices of tofu on top of the peanuts on the bottom layer of the baguette.
  • Top tofu with julienned  carrots and cucumbers
  • Top carrots and cucumber with fresh mint, cilantro and jalapeños (to your taste)
  • Place top of baguette on top of sandwich
  • Wrap in parchment paper and twist the ends tightly to secure
  • When ready to serve, slice sandwich diagonally and secure sandwich using long bamboo toothpicks
  • ENJOY!!!
Alternate Ideas

You can make this using other veggies if you do not want to use tofu. Try fried eggplant, grilled zuchinni or fried shiitake mushrooms.

You can make this sandwich using bbq’d pork loin, chicken, beef or meat alternative.

You  can make this into a sandwich that stretches the length of a picnic table! Line table with parchment paper, and connect multiple sandwiches to give the illusion that it is one giant sandwich! This is always fun at a party.  Just make sure to trim off the ends of the “inner” sandwich, but keep the baguette ends on the “outer” sandwich.
