From its modest inception, Global has developed into one of the most successful brands of professional kitchen knives in the world.  Still crafted by hand in Niigata, Japan, Global knives are manufactured to extremely high and exacting standards.

Also known as a butcher knife, this heavy-duty rectangular knife is used for splitting or cleaving meat and bone. Great for cutting big slices of meat and poultry.

The blade is made of the finest stainless steel called CROMOVA 18 (Chromium, Molybdenum and Vanadium), designed exclusively for GLOBAL®.
Ice tempered and hardened to Rockwell C56 – C58 degrees which holds the razor-sharp edge of the blade longer than any other steel.
Ergonomic, stainless steel hygienic handles with signature dimple pattern offer a comfortable, slip-resistant grip.
